Last night’s Salmon with Dill Sauce dinner recipe was adapted from Real Simple magazine.  The fish came out pretty fatty from the oven which I think was because I cooked it too long but oh well.  It was also more than what a single serving of salmon should be but whatever.  The sauce is easy to make and spices up your heart healthy Omega-3’s. 

  • 1/2 cup of Nonfat Greek Yogurt (Real Simple said to use Sour Cream)
  • 2 tbsp Lemon Juice
  • 2 tbsp Chopped Capers
  • 2 tbsp Chopped Dill 

This makes enough for 4 servings.  Just mix all the ingredients together and viola!  I baked my salmon with a little bit of pepper and olive oil spray.  

As for the brussels sprouts, I sprinkled pepper, garlic powder, dill and thyme with a little bit of olive oil.  Roasted them in the over on 350 for 10 minutes.  After 5 min, give them a good shake.  The black lentils were from Trader Joe’s and came in one of those microwave pouches.
