BBQ Cauliflower Chickpea Tacos

I regularly complain about not being able to cook satisfying vegetarian dinners. This week, I found a keeper that is simple and will surprise you at how filling it is.

I ordered 3 dinners through Just Add Cooking last week. The first meal we made, I had before during an event in the fall. When I saw it as an option again, I jumped at the opportunity to make it. It was a Seared Prawns with Salsa dinner. The shrimp were so easy to make with garlic, paprika, dill, raisins and lemon juice. The salsa still seems out of place to me on top of the rice but works for what it’s worth. I added my own broccoli.

What I love about the Just Add Cooking boxes are that they are locally sourced. The salsa was from Nola’s Fresh Foods in Boston and the shrimp from local seafood provider Caption Marden’s.

For the BBQ Cauliflower Chickpea Tacos, the corn tortillas were from Mi Nina Tortilla in Needham, MA, the chickpeas from Joe’s Kitchen in Vermont and the Taco Seasoning from Bondat Foods in Boston, MA.

After roasting the cauliflower and chickpeas with the taco seasoning, I chopped up some cabbage and made a mayonnaise dressing. Nick LOVES a good cabbage slaw on tacos so I thought he might actually like this vegetarian dinner. IMG_2692

To both our surprises, the meal came together perfectly and was ready in less than 45 minutes. We ate after Tommy went to bed and enjoyed having dinner at the table with each other. The cauliflower was purple so if it looks burned, it’s not, it’s just purple and low lighting in my kitchen.  IMG_2691

The side was green beans with some shallots and chopped egg. The slaw and the BBQ seasoning were key to making these simple vegetarian tacos stand out.

Here is how to recreate the slaw:

Combine 4 oz sliced green cabbage with the dressing and coast well. The dressing is made by whisking together 4 tbsp mayonnaise, 1/2 fl oz of cider vinegar, 1 tsp caraway seeds and the juice from 1/4 of a lime. This would taste good with fish tacos as well!
