My Signature Grilled Summer Dinner

Last night, I brought back my signature go to dinner during the summer. We are lucky to have an outdoor patio where we live and so I feel obligated to take advantage of our grill. On the menu was grilled zucchini and summer, 1/2 an ear of corn, and 4 oz of grilled chicken. Yes, I weighed the chicken breast and cut it accordingly.To spice up the chicken, I tossed together diced tomatoes, Kalamata olives, feta and Trader Joe’s Balsamic Glaze. I topped the lean protein with the mixture.
I woke up and was eager to get in a quick booty call run. Since Wednesdays are my strength day, I only went for 30 minutes using my 30-90 interval program using RunKeeper. I passed by the Esplanade by the Charles River and saw them setting up the stage for the 4th of July concert and fireworks. Despite living a couple blocks from this Boston landmark, I’ll be in the Cape at this time next week.
I love the 30-90 interval workout for morning bootycalls. It get’s my heart up and my legs are energized by the end. I decided to walk a little bit when I got back hence the slow pace.

When I got back, I was starving. I made a protein pancake with my last packet of Tone It Up’s Perfect Protein powder. I just made the regular banana and flax with cinnamon flavor but added a few fresh blueberries as well. A few of you asked what I thought about the Perfect Protein and I give it the thumbs up. If you don’t like vegan protein powders though, this is not for you. It has a similar taste to Vega Sport which I love, but is a little chalky. I actually like the chalkiness that vegan powders give off, but I know many of you are not. It’s a different texture than whey. The packets are great for traveling which I need in the summer and the price is attractive!

I’m getting excited for the 4th of July, stepping up my diet (or trying at least). What are you planning to do next week? I can’t believe it’s only one week away. I’m bummed it’s on a Wednesday but hopefully good weather will help overshadow the unfortunate mid-week timing.
