Lovely fresh diet salad with soy glazed tofu and roasted mushrooms!
Make your own version with spring mix, alfalfa sprouts, and citrus lemony dressing.  To make the mushrooms, toss some baby bellas with soy sauce, canola oil, salt, pepper and whatever other spices, roast in the over or toaster oven on 350 for about 10-15 minutes or until wilted.  To make the tofu, cut a serving size in half (the width way) and place between a paper towel.  Put a heavier object on top to absorb some of the liquid.  Preheat a frying pan, spray with some canola oil.  Right before you put the tofu into the pan, drizzle some soy sauce in the pan or on top of the tofu, cook on each side until desired darkness, and enjoy!
