Spicy Watermelon Salad with Feta Salad & Mint

Certain flavor combinations seem to rise in popularity just like fad diets. One of the most odd yet delicious pairings for me is watermelon and feta cheese. Just like chocolate covered bacon, the sweet and salty duo creates an irresistible treat, only this one has less fat and zero added sugar!

In San Francisco a few weeks ago, the head chef at Frito Lay, Chef Jody, showed myself and the other bloggers a few recipes that inspired the new flavors of the Smartfood Selects line.

The Smartfood brand offers a line of snacks that of course includes the white cheddar popcorn we remember from growing up but also puffed corn and popped chips made with no artificial colors or flavors. My favorite recipe created by Chef Jody was a Spicy Watermelon Salad with Feta Cheese and Mint which inspired the Feta Herb Hummus popped chip flavor.

The hummus popped chips is a balanced snack that has 3g of fiber per 1 oz serving. Many of the other varieties are gluten free, too. Smartfood teamed up with Self Magazine to announce the SMARTest City to help promote brand awareness about the new flavors. Which is where I come in but more importantly how I discovered this amazing Watermelon and Feta salad. Make this for your next summer BBQ!

Spicy Watermelon Salad with Feta Cheese and Mint (Serves 4-6)

Prep time: 20 mins  Ready In: 20 mins

  • 6 cups cubed seedless watermelon
  • 1 cup red onion, cut thin julienne
  • Juice 2 limes
  • Pinch of cayenne pepper
  • pinch of sea salt
  • 1 cup crumbled Feta cheese
  • 2 tbsp chopped fresh mint leaves

Combine watermelon, red onion ,lime juice, cayenne, a pinch of sea sat and mint. Mix until well combined, then very gently toss in the seta cheese. Arrange on plates or in bowls and top each plate with a pinch of coarse sea salt and serve.

I’ve been trying to eat less meat to be smarter about eating a sustainable diet. This side salad while is not a main meal, is delicious and satisfying.
