I eat the same things every week. Usually I alternate between almond butter toast, protein pancakes and yogurt/granola/fruit cups. In my new video today, I’m sharing my favorite protein pancake solution for a quick solution as well as two super quick breakfast recipes that my family loves.
Krusteaz Buttermilk Protein Pancake Recipe
All you need to make these protein pancakes are mix and water! They taste delicious as is but you can always add chocolate chips or blueberries. I also enjoy making these in my mini waffle maker. This way, I don’t have to worry about burning my pancakes, the waffle iron let’s me know when they are done and they cook even quicker – perfect for school mornings!
The pancake mix has 13g of protein per serving and 180 calories. They are non-GMO, super fluffy and the protein comes from a plant based wheat protein. This is why I like the taste of these so much! They taste like actual pancakes! I hate the taste of whey in protein pancake mixes so these are a winner. You can add nut butter or fruit compote instead of syrup for a lower sugar breakfast.
Preheat your oven to 350F. Mix 2 mashed bananas, 1 cup of quick cooking oats and whatever additional toppings you want! I like to add chocolate chips for Tommy but if I’m making them for myself, I’ll add blueberries. Cook for 10 minutes.
Eggs in a Mug
Mix two eggs in a mug that has been lightly sprayed with cooking oil of choice. Add in a tablespoon or two of fresh salsa or pico de gallo. Mix well. Microwave for 45 seconds, stir and then cook again for another 45 seconds!
That’s it! These are supposed to be super easy, quick and healthy breakfast recipes. If you wanted something more complicated, I’m sorry. These are so delicious and anyone has time to make these. Never knew that Krusteaz had a protein pancake mix--so cool! It would have been perfectly vegan-friendly without the buttermilk--oh well! I love the breakfast cookie idea though. Sounds amazing!
