Sometimes switching up your routine is all you need to become reenergized. From a new breakfast recipe to a new group exercise class, your challenge before Monday is to add something new to your routine!
Breakfast as you know, is one of the most important meals of the day. Starting off with something that is satisfying will start your day in a positive direction. Make sure to include protein, carbs and fiber to help energize your body and keep you feeling full until lunch.
Here is what I’ve been enjoying for the past week:
Cinnamon French Toast with Greek Yogurt
- 1 Egg White
- 1/3 cup Unsweetened Almond Milk
- 1 tsp Cinnamon
- 4 drops of NuNaturals Vanilla Stevia (Optional, may also use sugar or other sugar substitute)
- 1 slice of Ezekial Bread
- 1/2 cup of Non-Fat Greek Yogurt
First, mix together first 4 ingredients. Feel free to add more milk or cinnamon. To be honest, I do not measure but did so for this recipe.
Next, dip a slice of bread (I prefer Ezekial) in the egg mixture, coating both sides. I like to let my bread soak for about 5 minutes but this is purely optional.
Preheat a little frying pan. Grease with your choice of cooking spray or butter if you like. Add bread and top with leftover mixture that was not soaked in. Cook for 2-3 minutes on each side or until it reaches your desired toasting color.
You may top with maple syrup but for a high protein jump start to the day I add plain greek yogurt mixed with a few stevia drops. I add 1/2 cup for 60 calories. If you wish, add a few slivered almonds.
You can dip the bread into the yogurt mixture like I do, or plop it all on top. This takes me a total of 10 minutes to make! Since I’ve been loving grapefruit these days, I have a 1/2 in addition to my Ezekial French Toast.
