Grilled Chicken Summer Greek Salad Recipe

It is hot, hot, hot!  This morning I woke up early and got in my most difficult day of interval training.  I did cardio workout #2 from my post earlier this week.  Afterwards, I watched my heart rate monitor as I burned an additional 100 calories after I had stopped.  That was fun. I needed some serious hydration so I sipped on my favorite new beverage.  Replenishing electrolytes is a must when it comes to running in the heat!

Last night, I made a delicious dinner for roomie and myself.  Since we are not around much in the summer, I try to use what I have on hand, refraining from buying ingredients that will go unused.  

The chicken recipe I stole from this month’s Real Simple.  It really was real simple.  I just mixed together:

  • 1 TBSP of Paprika
  • 1 TBSP of Oregano
  • Salt and Pepper.
  • 3 chicken breasts

Coat the chicken with the seasoning mixture and place on preheated grill.  Turn once for juicy meat, cook until it’s not longer pink.

As for the salad, I combined what I had in my refrigerator that I thought would go well together.  Roomie agreed it was delicious.  I love adding garbanzo beans to salad.  They give it a good texture.

  • 4 cups of Mixed Greens
  • 1/2 cup Garbanzo Beans
  • 1 med sized Summer Squash Chopped
  • 1/2 Beefsteak tomato chopped
  • 4 Kalamata Olives chopped
  • 1/2 cup of feta cheese
I used balsamic vinegar to dress my salad, and roomie used a new Feta dressing from Trader Joe’s I bought.  I topped it off with 1/2 of a grill pita bread.  Perfect!
For dessert, I tried one of Trader Joe’s newest frozen desserts.  It was a peach frozen concotion that was only 45 calories and seriously amazing.  It was like a chunky slush in an ice freeze plastic packing.  Might be a new favorite summer treat.  Wish the ice cream man gave out option like that!
What is your favorite cool down treat?  Mine is the screw ball although I rarely get it these days.. sigh.
