On The Go Healthy Pizza Recipe (GF, V, Kid Friendly)

Who doesn’t love pizza right? While I admit I only order it if I’m hungover (because it tastes so much better), I enjoy making my own healthier versions regularly at home for an on the go snack especially if my nephews are in town.  I’ve mentioned in the past that I am not the biggest fan of milk products. I notice that if I consume dairy, I tend to break out, feel bloated and my digestion is not as great.  I still eat dairy products on occasion (see my Instagram profile) but rarely at home.

Whether you’re lactose intolerant or sensitive to dairy, these GO Veggie! Vegan Cheese Shreds are a great alternative.  They are not only vegan but also non-GMO, gluten free, casein free, and soy free. It’s really hard to find a non-dairy cheese alternative without at least one allergen in the ingredients, but GO Veggie! prides itself on keeping their products as versatile and user-friendly as possible.  This is not a ground breaking recipe, but I always forget how simple and easy it is to make. It is also a kid favorite.

Easy Veggie Pizza (Vegan, Gluten Free & Kid Friendly)

What You’ll Need:

  • 1 whole wheat or brown rice tortilla
  • 3 tbsp of your favorite tomato sauce or salsa for a Mexican pizza
  • ⅓ cup GO Veggie! Mexican Style Shreds
  • Veggies of your choice — I used green peppers from the farmers market

Preheat the oven to 350F.  Put the tortilla with toppings on an oven sheet.  If you have a rack to place the tortilla on, that will help the wrap get crusty!

Cook for 10 minutes or until cheese is fully melted.  Let cool for a few minutes and enjoy! This recipe clocks in at just 270 calories so you don’t have to throw your fitness goals away when you want some comfort food. I used to make this in college after a night out at the bars… saved me money and calories!
