On The Go Healthy Pizza Recipe (GF, V, Kid Friendly)

Who doesn’t love pizza right? While I admit I only order it if I’m hungover (because it tastes so much better), I enjoy making my own healthier versions regularly at home for an on the go snack especially if my nephews are in town.  I’ve mentioned in the past that I am not the biggest fan of milk products. I notice that if I consume dairy, I tend to break out, feel bloated and my digestion is not as great.  I still eat dairy products on occasion (see my Instagram profile) but rarely at home.

Whether you’re lactose intolerant or sensitive to dairy, these GO Veggie! Vegan Cheese Shreds are a great alternative.  They are not only vegan but also non-GMO, gluten free, casein free, and soy free. It’s really hard to find a non-dairy cheese alternative without at least one allergen in the ingredients, but GO Veggie! prides itself on keeping their products as versatile and user-friendly as possible.  This is not a ground breaking recipe, but I always forget how simple and easy it is to make. It is also a kid favorite.

Easy Veggie Pizza (Vegan, Gluten Free & Kid Friendly)

What You’ll Need:

  • 1 whole wheat or brown rice tortilla
  • 3 tbsp of your favorite tomato sauce or salsa for a Mexican pizza
  • ⅓ cup GO Veggie! Mexican Style Shreds
  • Veggies of your choice — I used green peppers from the farmers market

Preheat the oven to 350F.  Put the tortilla with toppings on an oven sheet.  If you have a rack to place the tortilla on, that will help the wrap get crusty!

Cook for 10 minutes or until cheese is fully melted.  Let cool for a few minutes and enjoy! This recipe clocks in at just 270 calories so you don’t have to throw your fitness goals away when you want some comfort food. I used to make this in college after a night out at the bars… saved me money and calories!

    I call these pita pizza’s and they are my favorite! Whenever I am craving pizza I make these and they satisfy my craving! They are so easy, quick and taste delish, I usually add a ton of vegetables on them too to bulk them up so I stay full longer 🙂

    I am a huge fan of Naan pizzas! My mom discovered the idea in a magazine (Real Simple maybe?) about 4 years ago and I’ve been making them ever since. I also love to make myself a “mocktail” to drink on weeknights while taking a relaxing bath instead of drinking wine or another drink. Club soda, pure cranberry juice, and fresh lime is all I use!

    Yum! Have been meaning to try Go Veggie cheese… I’m impressed by how well it melted in your photos! I was worried about texture issues.

    Good idea! I love those tortillas. Just curious -- do you eat much yogurt? I go back and forth on Greek yogurt these days. I do not really eat much dairy either on a regular basis.

    My favorite faux comfort foods is pizza, but another fav is a bison burger (no bread) with baked sweet potato wedges. Feels like chowing down on a burger and fries but lots healthier! Sometimes I add mushrooms or calamata olives to the burger.
