Recipe: Loaded Italian Meatballs with Lexi’s Clean Kitchen

Meatballs and mini meatloaf are a staple in my household. You take a lean ground up meat, add some spices and veggies and in 15-20 minutes you’ve got a delicious dish perfect for dinner, meal prepping or throwing on a power bowl.

I’m a huge fan of this turkey meatloaf from Jamie Eason and the mini buffalo chicken meatloaf recipe from PaleOMG. Now, I have another recipe to add to my regular rotation, these Loaded Italian Meatballs from Lexi’s Clean Kitchen.

Turkey Spinach Meatballs

Like the others mentioned above, these are paleo friendly, gluten free and dairy free. The ingredients are so simple, you likely have most of them in your house already.

Meatballs like this are great on spiralized noodles, spaghetti squash, regular or gluten free pasta, as an appetizer on Game Day served with tooth picks, or even just chopped up on top of a power bowl or salad.

Lately, I’ve been obsessed with the quinoa and brown rice pasta from Trader Joe’s. Tommy loves it, too.

I shot this video with Lexi who lives near by a few weeks ago. It was so much fun getting to work with another woman who turned her passion into blog which became her full time job.
