Simple Cucumber Salad Recipe

Cucumbers were on sale this week at Trader Joe’s. Oh wait… they don’t have sales. They just randomly have new items for a limited time and if it’s produce, it’s probably in season or something. So, yeah. I bought one for 60 cents and decided to explore for a simple way to prepare it instead of being boring and ya know, put it in a salad.

After searching Foodily, I decided to take matters into my own hands and create my version (really I just blended and healthified). I’m astonished at how good and easy this was to make, which is why I’m now sharing it. If you like seaweed salad from sushi restaurants, you need to make this.

Simple Cucumber Salad Recipe

  • 1 Large Cucumber (peeled and thinly sliced)
  • 2 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • Salt, Pepper and Red pepper to taste
  • Sesame seeds (optional, since I didn’t have any but think they would be a nice addition)

Combine the ingredients and enjoy. You can let it sit if you want up to 2 hours a few recipes said, but I ate the whole thing. It’s about than 60 calories.

I rarely post my dinners because I don’t find them to be all that attractive, especially since I discovered how much I love TJ’s Balsamic Glaze. I put that sh*t on everything… but I don’t think I’ll put it on my sweet potato again. That was not good. I also had a salmon patty with the glaze or rather, I had the glaze with a side of salmon. Simple dinner. This would be a good side to have if you get take out sushi and want more veggie volume!
