Buffalo Chicken Meatloaf Recipe

One of my pregnancy cravings has been Buffalo Chicken. This healthy, paleo, gluten free recipe was my savior, allowing me to enjoy as much as I wanted guilt free.

What you’ll need:

  • 1 lb ground Chicken (you can use Turkey as well)
  • 1/4-1/2 cup hot sauce, I used Frank’s Red Hot
  • 1/2 cup chopped onion
  • 1/4 cup coconut flour (or almond or oat flour or regular flour)
  • 1/2 cup chopped celery, carrots (mixed)
  • 1 egg
  • 1 tsp garlic powder
  • salt and pepper to taste

Preheat oven to 375F

Combine all the ingredients in a bowl. Blend well. Divide into muffin tins or put into one loaf pan. Bake for 25-35 minutes or until cooked all the way through. Let sit for 5-10 minutes and enjoy!

This is a great meal prep recipe. I love using glass Tupperware because it is BPA free and works well to use when reheating. I’m saving all my favorite recipes like this for when the baby comes so we won’t have to worry too much about cooking dinner and lacking energy.
