Last night for dinner I decided to take part in #meatlessmonday! I made a Mexican salad with Lightlife Smart Ground Mexican style, Avocado Vinaigrette from Whole Foods and Bragg’s nutritional yeast for cheesy flavoring. Conveniently, I had left over peppers and onions from Sunday night fajitas to use as well.
I really love the Avocado dressing. It is from the Health Starts Here line which doesn’t use added oil. It’s actually very creamy and made with tofu. It has only 20 calories per serving (2 Tablespoons). I have the Cesar flavor as well, but like the avocado better.
They have this at my local fresh & easy and I’ve been wanting to try it, how does it compare with the taste of meat? I am quasi vegetarian but HAVE to have taco night for the kids once a week. Is it similar in taste or is it like Boca? ~ which I can’t stand. I prefer garden burgers.
Hi Jen, I REALLY liked this one. I have done the garden burger frozen crumbled and really like them too. I don’t know if I’ve tried Boca -- I hate their vegan burger but not sure if it’s similar. I think it would work great for tacos. If you try it and hate it, I will be surprised.
Avocado dressing sounds so good. I’ve never seen Lifestart before, sounds good though.
