I am so excited to share with you a gluten free and paleo friendly stuffing recipe for Thanksgiving. I was shocked at how good and similar this tasted to the real stuff.
It does have cranberries which are usually sweetened with sugar and may be off limits for strict Paleo dieters. If that’s you, just omit the cranberries or use currants instead. Other than that, it is good to go for gluten free folks as well.

While making it, I also burned 200 calories in the kitchen! It shouldn’t take you 2 hours, don’t worry. I didn’t know what I was doing and testing out different varieties. I also tried to really caramelize the onions and brown the sh*t outta the sweet potatoes which can take a while. Do this step in advance to save time.
How many does this serve?
As a side dish it will serve 6-8, as a meal 3-4.

Can this stuffing be made a day in advance. I am trying it this year by not putting everything together until the day of and then baking off. Hope it works
