On the third day of fitness my blog friend gave to me, Dicks Cottons sunglasses.

Last week, I created a new go-to favorite fall recipe based on my dinner with Ashley of Practical Cooking For One.
Kale and Brussels Sprouts Salad
Time: Prep 20 minutes, Cooking, 15 minutes
Ingredients:
6 cups Kale, stems removed and thinly sliced
2 cups Brussels Sprouts, thinly sliced
1 tbsp Extra Virgin Olive Oil
1 clove Garlic, chopped
1/2 tbsp Lemon juice
2 tbsp Pecorino Romano (or Parmesan Cheese)
2 tbsp Sliced Almonds, lightly toasted
1 tbsp Raisins (optional)
Directions:
In a large skillet, heat 1 tbsp of olive oil (or liberally spray) on medium. Add in chopped clove of garlic and sauté for about 2 minutes. Next add in Brussels Sprouts and cover for about 4 minutes. Sauté for another 5 minutes or until they begin to soften. Next, add in kale. Make sure that the kale and Brussels Sprouts are evenly distributed. Add in lemon juice, some pepper and salt to taste. Cover for another 3 minutes or until kale appears brighter and slightly wilted. Remove from heat. Add in cheese, almonds and raisins. Toss and serve.
This healthy recipe is an amazing addition to any entrée. I had for myself with a homemade turkey burger which I made in the same frying pan as the salad to reduce the amount of clean up. I also left in about a tablespoon of the salad and mashed it into the burger as it cooked. You can have this with quinoa for a vegetarian dish, grilled chicken or favorite white fish. All it needs is a hint of lemon and pepper.
