Cocoa Coconut Snack Bar Recipe

I love making my own homemade granola bars and rarely make the same recipe twice. This time though, I think I found a new recipe that just may become a regular in my Sunday routine. I’m excited to share this new snack bar recipe featuring organic cocoa rice crisps and coconut.

This is a simple, vegan and gluten free recipe for on the go breakfasts or mid afternoon pick me up snack for after school or before a workout.

These have just the right amount of sweetness to satisfy a sweet craving but not set off a sugar binge. Balanced with 3g of fiber, 3g of protein and 5g of heart healthy fats, you will feel full and energized.

My recipes are made out of what ingredients I have on hand. I also hate buying ingredients that I will inevitably eat (too much) out of the bag. I wanted a little bit of chocolate in this one so when I saw the crisped rice on sale for $2 a box, I decided to use it in my recipe. Make this on a Sunday for snacks throughout the week and save some money on buying prepackaged bars.

    This sound delish! What could I use instead of banana? I won’t eat anything at all with banana in it. Wonder if I can omit altogether….
