Raw Vegan Truffle Recipe for Valentine’s Day

Happy Galentine’s Day! Sharing a new video on YouTube featuring a healthy truffle recipes that’s also raw and vegan.

If you’re like WTF is Galentine’s day, here’s a refresher from Leslie Knope, aka Amy Poehler’s character on Parks and Recreation:

“Oh it’s only the best day of the year. Every February 13th, my lady friends and I leave our husbands and our boyfriends at home, and we just come and kick it, breakfast-style. Ladies celebrating ladies. It’s like Lilith Fair, minus the angst. Plus frittatas.”

So this sounds totally amazing but unfortunately, I think I’m spending it with 3 boys. Tommy, Nick and the one in my belly. I would have loved to peace out and do something fun but being a work from home mom doesn’t always allow you to do those things when it’s a week day night.

Vegan Truffles

 

6 Ingredient Raspberry Almond Vegan Truffles

What you’ll need:

  • 1 cup Pitted Dates
  • 1/2 cup Almond Flour
  • 2 tbsp Almond Butter
  • 2 tbsp Water

Blend well in a food processor until smooth. Roll in 1 inch thick balls and then coat with dry mixture…

Combine 2 tbsp of shredded coconut and 2 tbsp of freeze dried raspberries and combine in a plastic bag or bowl and grind with a mortar or hit with a weighted press, the end of an ice cream scoop, or rolling pin. Anything!

This recipe makes about 12-16 balls depending on the size of each one.
