As a kid, I loved chicken nuggets. They were my go to, along with 95% of other the children. I actually called them McNuggets. I didn’t realize the “Mc” only applied when you ordered them at McDonald’s. Now with Tommy, I have a feeling I’m going to be eating them a lot more (not the Mc version if I can help it.)
Thankfully, here is a healthier version that we can both enjoy together. It’s easy to make, paleo friendly and gluten free too. Basically, we use almond flour instead of breadcrumbs and add a lot of fun spices to make them flavorful. I was surprised at how good they really were. These would have been amazing when I was pregnant.
I brought home the leftovers from this shoot and ate half of the nuggets by themselves and the other half were put on top of a salad. This is an awesome meal prep recipe as it’s easy to make a lot and reheating them will add extra crunch.
