Frozen Dinner: Mango Coconut Mahi-Mahi

This morning, my protein pancake looked extra fluffy!  I’m not sure why but I did make it with a frozen banana.  I forgot to buy a bunch this week when I went to Whole Foods on Monday night, but luckily froze some extras from last week before they were about to go bad.  I love how bananas taste when they are just paste their prime.  I freeze them if I don’t have any immediate use.

I took this picture back in the 70’s… just kidding it’s just with an iPhone app for fun, but you already knew that.  Last night, I had such a sweet tooth (damn PMS) so I mixed 1/2 frozen banana with 1/2 cup of unsweetened almond milk with 1/2 scoop of Designers Whey Chocolate Protein Powder with my immersion blender.  OMG.  It was soooo good.  You need to try this if you have a sweet tooth like me.

For dinner last night, I made Coconut Mango Mahi Mahi that I bought already marinated and frozen from Trader Joe’s.  I had never seen this kind before so when I saw the word “MANGO” I didn’t even care to glance at the price.  I let the fish thaw for about 20 minutes in a bowl of cold water and then grilled it for about 4 minutes on each side.  Trader Joe's Mango Coconut Mahi MahiIt was so delicious! I can’t wait to buy it again when I see it in the store.  Trader Joe’s is quirky like that.

I also made a delicious creamy quinoa salad with sun dried tomatoes, spinach and a Laughing Cow Wedge Light Original.  I topped it off with a little Roasted Pepper, Eggplant and Garlic spread for Trader Joe’s because I’m officially obsessed.  For just 15 calories per tablespoon, it packs some serious flavor.  Roomie isn’t as big a fan as I am though (most likely because it’s pretty sweet).  For a vegetable, I grilled some frozen asparagus.  I love these because they take literally 5 minutes to make and are always available in my freezer.  I love asparagus!  The frozen version is always around my house.

The best part about this dinner is that nothing is really perishable (except for the spinach but that could have been frozen too).

Question: Do you have a favorite Trader Joe’s item that is only available randomly?  If so, what is it so I can be sure to buy it next time!

    I’ll have to look for the mahi mahi, it sounds great! I’ve really been wanting to try their salmon patties but they never have them anymore!! :/

    that sounds amazingly delicious! wish i had read this before I had gone grocery at Trader’s this am! 🙂
