Homemade Twix Bars (Gluten and Dairy Free)

I saw a picture on @GoodForTheSwole’s Instagram for homemade Twix bars and had to make them myself when I realized I had all the ingredients! These would be perfect for FASTer Way To Fat Loss treat day or any day really for that matter. It was a simple recipe but did take some time to make because you need to cool each layer. The result was a hit the entire family LOVED!

The recipe was taken from @rachaelsgoodeats but this recipe can be found all over the internet with slightly different variations. Some use all coconut flour for the cookie, some use different nut butters, some swap maple syrup for honey and there are also slight variations in coconut oil measurements. I have not tested the variations but I don’t think you can go wrong!

Over the past couple days, I’ve started fasting again 14 hours and am now beginning to track macros and eat gluten and dairy free. I am 15-20 lbs heavier than pre-pregnancy and I know it’s not all quarantine-15 considering I had a baby a month ago but a month postpartum with babies 1 + 2, I was only 10 lbs up so that leaves me to assume I did gain a good quarantine 5 or 10 lbs. I have such a sweet tooth still so I made these hoping to satisfy that craving with a nutritious option.

1/2 cup coconut flour
1/2 cup almond flour
1/3 cup coconut oil, melted
3 tbsp pure maple syrup (sub honey)

1/2 cup almond butter (sub for peanut or cashew butter)
1/4 cup coconut oil
1/4 cup pure maple syrup
1 tsp vanilla extract
pinch of sea salt

1/4-1/2 cup chocolate chips (we used Enjoy Life for GF/DF, sub 1 chocolate bar)
1 tbsp coconut oil
1/4 tsp flakey sea salt

Shortbread layer: Preheat oven to 350. Combine flours, melted coconut oil, and maple syrup in a bowl. Pat shortbread mixture into 8×8 baking dish. Bake for 10-12 minutes. Cool completely.
Caramel layer: Combine ingredients together in a saucepan on medium-low heat until completely liquified. Remove from heat and let cool completely.
Chocolate layer: Combine chocolate chips and coconut oil in a glass bowl and place on top of a sauce pan with water, heat on medium, stir until fully melted.


Once shortbread and caramel have cooled completely, pour caramel over the shortbread layer. Spread out evenly. Cool in fridge for 20-35 minutes. Once set, pour melted chocolate over the top. Sprinkle flakey sea salt and set in fridge for another 5-10 minutes. Once chilled, slice into bars and enjoy!
