Chocolate and Peanut Butter Protein Macaroons

On Saturday, I held my first event in Boston at The Bar Method with The Ripe Stuff Juice Cleanse. It was a fabulous success. Sarah Fit readers were able to try The Bar Method for free, and the rest of the clients were treated to yummy workout snacks like protein muffins and granola bars with Vega protein powder, and juice samples from The Ripe Stuff. Since I just finished my own 3-day cleanse, I was excited to sample another companies flavors. While I didn’t have a carrot or beet in my cleanse, the green juice was much less sour from The Ripe Stuff than BP. BarMethod Event Pictures

Sadly, I didn’t take pictures of any people or the cute first snowfall of the winter season. Serious blogger #fail. Originally I wanted to make protein pancakes for everyone. However, I didn’t want to bring an electric skillet and wasn’t sure how well the cold ones would taste. I chose to make a variety of my favorite recipes including my post-workout protein granola bars, low carb blueberry muffins (in a cake pan), and regular granola bars for those who didn’t want protein powder. I also brought along the new Laughing Cow Smooth Sensations Cream Cheese spreads in Cinnamon Cream and Strawberry for back up in case I ran out of baked goods! There is a bagel shop close that makes “skinny” aka thin versions that I was prepared to visit.

Macaroons

Last minute, I decided to also make a new recipe using coconut and the Vega Protein powder that would make a lot of servings. It was a simple, quick and easy recipe I think I might have to make more regularly. I found a recipe on Brittany of Eating Bird Food’s site that sounded good, so I went with her basic version and added my own chocolate and peanut butter twist.

Chocolate Peanut Butter Macaroons (Makes 15 macaroons)

  • 1/4 cup of Egg whites
  • 2 tablespoons of Agave Nectar
  • 1 tablespoon Natural Peanut Butter
  • 10 drops of NuNaturals Chocolate flavored Stevia
  • 1 scoop Chocolate Protein Powder
  • 1 cup of Unsweetened Dried Coconut
Preheat the oven to 250F. Combine the wet ingredients first into a bowl. Next add in the protein powder and blend well. Lastly add in the coconut. Use a tablespoon or melon ball scoop to scoop macaroons onto parchment paper. Bake in the oven for 10-15 minutes or until the edges start to turn a golden brown. Enjoy as a post workout, pre workout or any time of day pick me up snack!

    I’ve followed you for a while, I love your blog! Where is The Ripe Stuff located? Is there a store? Living in Boston I would LOVE to try their cleanse! When are you starting it?

    Love this recipe Sarah! Chocolate and peanut butter is my favorite combo. So sorry I missed out on the event last Saturday. Sounds like it was a lot of fun!
